Prepare chickpeas (if using canned)

Drain and rinse canned chickpeas. For creamier hummus, peel skins by gently rubbing between your fingers or simmer the chickpeas in water with 1/2 tsp baking soda for 10 minutes, then drain and cool.

Process tahini and lemon

In a food processor, combine tahini and lemon juice and blend for 30 seconds to 1 minute until slightly whipped and paler in color. This step helps create a smooth emulsion.

Add garlic and spices

Add the garlic cloves, ground cumin, and kosher salt to the whipped tahini and pulse a few times to incorporate.

Blend chickpeas

Add the chickpeas and 2 tablespoons cold water to the food processor. Process for 1 minute, then scrape down the sides. Continue processing 1–2 minutes until thick and smooth. If too thick, add additional water 1 teaspoon at a time to reach desired consistency.

Finish with olive oil

With the food processor running, drizzle in 2 tablespoons extra-virgin olive oil and blend until fully incorporated and very smooth, about 30 seconds.

Serve

Transfer hummus to a shallow serving bowl, create a small well in the center, drizzle 1 tablespoon olive oil, sprinkle smoked paprika and chopped parsley. Serve at room temperature with pita, vegetables, or crackers.

Baba Ganoush (Smoky Eggplant Dip)

Roast eggplants

Preheat the oven to 450°F (230°C). Prick the eggplants a few times with a knife to allow steam to escape. Place whole eggplants on a rimmed baking sheet and roast 35–45 minutes, turning occasionally, until the skin is charred and the flesh is very soft. Alternatively, char over a gas flame or grill for smokier flavor.

Cool and drain

Remove eggplants and let cool until manageable. Cut open, scoop out the flesh into a fine-mesh sieve or colander, and let drain 10–15 minutes to remove excess liquid. Press gently with a spoon to remove additional moisture.

Combine and blend

Transfer the drained eggplant flesh to a food processor. Add tahini, lemon juice, garlic, cumin, olive oil, and kosher salt. Pulse until combined, then process 30–60 seconds until mostly smooth but still slightly textured. Adjust seasoning to taste.

Finish and serve

Spoon baba ganoush into a serving bowl, drizzle with a little olive oil, sprinkle smoked paprika if using, and garnish with chopped parsley. Serve warm or at room temperature with pita or crudités.

Tzatziki (Cucumber Yogurt Dip)

Prepare cucumber

Grate the peeled, seeded cucumber on the large holes of a box grater. Place the grated cucumber in a fine-mesh sieve or clean kitchen towel, sprinkle with a pinch of salt, and let sit 10 minutes. Squeeze firmly to remove as much moisture as possible (this prevents a watery tzatziki).

Mix yogurt base

In a bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, salt, and pepper. Stir until smooth.

Incorporate cucumber and chill

Fold the drained grated cucumber into the yogurt mixture. Taste and adjust seasoning. Cover and refrigerate at least 30 minutes to allow flavors to meld. Serve chilled, drizzled with a little olive oil and extra dill if desired.

Muhammara (Roasted Red Pepper & Walnut Dip)

Toast walnuts (if not pre-toasted)

Preheat a skillet over medium heat. Add walnuts and toast, stirring frequently, 4–6 minutes until fragrant and lightly browned. Remove and cool slightly.

Blend ingredients

In a food processor, combine toasted walnuts, roasted red peppers, lemon juice, pomegranate molasses, smoked paprika, ground cumin, Aleppo pepper (or red pepper flakes), and kosher salt. Pulse to break down, then process while drizzling in 2 tablespoons olive oil until the mixture is smooth but still slightly coarse—scrape sides as needed. Taste and adjust seasoning or acidity (add more lemon or pomegranate molasses if you want more tang/sweetness).

Finish and serve

Transfer muhammara to a bowl, drizzle with a little olive oil, and sprinkle a few chopped walnuts on top for texture. Serve at room temperature with pita, flatbread, or as part of a meze platter.
