Method
Sushi Rice
Rinse rice
Place the short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, stirring with your hand, until the water runs clear (3–4 minutes). Drain well.
Cook rice
Combine the rinsed rice and 360 ml water in a heavy-bottomed pot or rice cooker. If using a pot, bring to a boil over medium-high heat, then reduce to low, cover, and simmer 12–14 minutes without lifting the lid. Remove from heat and let rest, covered, for 10 minutes.
Season rice
While the rice rests, warm the rice vinegar, sugar and salt in a small saucepan or microwave just until the sugar dissolves. Transfer rice to a wide shallow bowl, gently fold in the vinegar mixture with a wooden spatula while fanning the rice to cool slightly until shiny. Cover with a damp cloth and keep at room temperature.
Assemble Rolls
Prepare nori
Place a nori sheet shiny-side down on a bamboo mat or clean flat surface. Wet your hands lightly to prevent sticking and spread about 1/2 cup of seasoned sushi rice in an even layer over the nori, leaving a 1–2 cm strip at the far edge free of rice.
Add fillings
Along the near edge of the rice, arrange 2–3 slices of fish, a few avocado slices and cucumber julienne. Sprinkle a pinch of toasted sesame seeds and some sliced green onion.
Roll tightly
Use the mat to roll the nori over the fillings, pressing gently to form a tight cylinder. Seal the edge with a little water. Repeat to make 3–4 rolls total.
Crispy Coating & Frying
Cut rolls
Using a sharp wet knife, slice each roll into 6–8 pieces. Keep pieces close together on a tray while you prepare the coating to avoid drying out.
Prepare dredging stations
Set out three shallow bowls: one with the flour, one with the beaten eggs, and one with panko breadcrumbs. If you prefer a tempura-style lighter batter, mix the 0.5 cup flour with 0.75 cup cold water (and a couple of ice cubes to keep it cold) to make a loose batter and use that in place of the egg station; otherwise proceed with eggs.
Coat rolls
Working in batches, dredge each sushi piece first in flour (shake off excess), then dip into the beaten egg (or cold batter), then press into panko to fully coat. Press gently so panko adheres but don’t compress the roll.
Heat oil
In a heavy 2–3 liter pot or deep fryer, heat neutral oil to 175°C (347°F). If you don’t have a thermometer, test with a small piece of bread or panko: it should sizzle and brown in about 30–45 seconds.
Fry until golden
Fry the coated sushi pieces in small batches (do not crowd) for 45–70 seconds per side, turning once, until the panko is golden and crisp. Use a slotted spoon to remove and drain on a wire rack or paper towels. Keep warm in a low oven (100–120°C) if needed while you finish remaining pieces.
Sauces & Plating
Make spicy mayo (optional)
In a small bowl, mix Japanese mayonnaise with sriracha to your preferred heat level (start with 1 tsp). Adjust to taste.
Plate
Arrange the crispy sushi pieces on a platter. Drizzle with Japanese mayonnaise (plain or spicy), and a little soy sauce on the side for dipping. Garnish with extra toasted sesame seeds, green onion, pickled ginger and a small dollop of wasabi.
Serve
Serve immediately while hot and crispy so the contrast between crunchy exterior and tender rice/filling is at its best.
