Method

Prep Produce & Dressing

Halve the cherry tomatoes and place them in a medium bowl. Add minced garlic and torn basil leaves (reserve a few small basil leaves for garnish).

Whisk together dressing ingredients: 3 tbs extra-virgin olive oil, 1 tbs balsamic vinegar, 1 tsp honey, 1 tsp Dijon mustard and 1 tsp salt (and 1 tsp lemon juice if using) until emulsified. Taste and adjust seasoning.

Pour about half of the dressing over the tomatoes, gently toss to coat, and let marinate at room temperature while you prepare the bread and burrata (5–10 minutes). Reserve remaining dressing for finishing the arugula and plate.

Grill Sourdough

Preheat a grill pan or skillet over medium-high heat (or preheat an outdoor grill). Brush sourdough slices lightly with 2 tbs olive oil and sprinkle with freshly ground black pepper.

Grill the sourdough 1.5–2 minutes per side, until nicely charred and crisp but still slightly chewy inside. Remove and set aside to cool slightly.

Optionally rub the toasted sourdough lightly with a cut garlic clove for a faint garlic note (if you prefer more garlic, rub before brushing with oil).

Assemble Salad Bed

Toss the baby arugula with the reserved dressing (use remaining dressing to lightly dress the greens). Toss just until leaves are glossy and not soggy.

Divide dressed arugula evenly among two serving plates (or one large platter), creating a loose bed for the burrata.

Plate Burrata & Tomatoes

Place one burrata ball on each bed of dressed arugula. Gently tear the top of each burrata to release the creamy interior just before serving, or leave whole and cut at the table.

Spoon the marinated cherry tomatoes and their juices around and over the burrata, distributing basil and minced garlic evenly.

Drizzle reserved dressing sparingly over the burrata and tomatoes for extra flavor (avoid drowning the cheese).

Finish & Serve

Drizzle 1 tbs balsamic glaze over each burrata and plate in an attractive zigzag or dots pattern. If glaze is very sweet/thick, use less to taste.

Scatter the reserved small basil leaves over the dish and sprinkle a light pinch of Maldon salt flakes across the burrata and tomatoes to enhance flavor.

Arrange the grilled sourdough slices alongside the plates. Serve immediately so the burrata is cool and creamy and the toast is warm and crisp.
