Bring burrata to temperature

Remove burrata from the refrigerator 20–30 minutes before serving to come to room temperature. This improves the creaminess and flavor.

If using additional fresh mozzarella, slice into 1/4-inch rounds and set on the serving platter as a base for the burrata.

Vegetables & Fruit

Prepare the tomatoes: halve the cherry tomatoes and cut the heirloom tomatoes into 1/2-inch wedges. Place them in a medium bowl.

If using cucumber: peel (optional) and slice the cucumber into 1/4-inch rounds or half-moons and add to the bowl with the tomatoes.

If using peach or nectarine: thinly slice into 1/4-inch wedges and add to the tomato-cucumber mixture for a sweet contrast.

Tear the basil leaves into medium pieces and set aside. Reserve a few whole small leaves for garnish if desired.

Dressing & Finishing

Make the dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar (or glaze), and fresh lemon juice. Season with sea salt, freshly ground black pepper, and crushed red pepper flakes if using. Taste and adjust seasoning.

Dress the vegetables: Pour about two-thirds of the dressing over the tomato-cucumber-fruit mixture and toss gently to coat. Let sit for 5–10 minutes to macerate and develop flavor.

Assemble the platter: Place the room-temperature burrata balls on the serving platter (on top of the mozzarella slices if using). Gently score the tops of the burrata with the tip of a knife just before serving so the creamy interior is visible and spreadable.

Arrange the dressed tomato mixture around and slightly under the burrata so some juices mingle with the cheese. Drizzle the remaining dressing over the burrata and tomatoes.

Finish: Scatter torn basil leaves over the platter. Add a final pinch of flaky sea salt and a crack of black pepper over the burrata. If using balsamic glaze instead of vinegar, drizzle a little extra glaze over the assembled dish for visual contrast.

Serve immediately with crusty bread, crostini, or crackers for scooping and spreading the creamy burrata and tomato mix.
