If you don't have ready honey syrup, make it quickly by combining equal parts mild honey and warm water (for example 1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool in the fridge. For this recipe you will use 1/4 oz; keep remainder chilled for other cocktails.

Honey syrup

Cut seedless watermelon into chunks and pulse in a blender. Strain through a fine-mesh sieve or cheesecloth to collect juice, pressing solids to extract liquid. Measure 1/2 fl oz for the cocktail and chill remaining juice.

Watermelon juice

Chill a large white-wine or wine coupe glass in the freezer for 5–10 minutes, or fill with ice water while you prepare the drink.

Add the pear liqueur (0.5 fl oz), honey syrup (0.25 fl oz), fresh watermelon juice (0.5 fl oz) and fresh lemon juice (0.25 fl oz) into a mixing glass or small shaker with a few ice cubes.

Add 2 dashes of orange bitters and a pinch of flaky sea salt to the mixing glass. The salt will amplify sweetness while keeping overall sugar perception low.

Vigorously shake the mixture for 8–10 seconds to chill and lightly dilute; this integrates the tiny honey syrup amount with the juices and liqueur.

Discard ice or water from the chilled wine glass. Strain the shaken mix into the chilled glass.

Slowly pour the chilled dry rosé (6 fl oz) into the glass over the strained mix, then top with the chilled sparkling wine (2 fl oz). Pour gently so effervescence layers and preserves a soft, round texture.

Give the glass one gentle stir (1–2 rotations) with a bar spoon to integrate without flattening bubbles.

Float the thin pear slice on the surface or set it on the rim. Add the small watermelon wedge or curl on the rim or skewer it alongside the pear.

Optionally express a small twist of pear peel or a light spray of orange peel oils over the surface for aromatic lift.

Serve immediately while chilled. The finished cocktail should be dry, low in perceived sugar, soft and round in mouthfeel with notes of red pear, watermelon, caramel (from honey) and a honeyed finish.
