Method

Aperol Spritz (per 1 cocktail)

Chill glass

Place a large wine glass or rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to chill the glass.

Add ice

Fill the chilled glass about three-quarters full with fresh ice cubes.

Pour Aperol

Measure and pour 4.5 oz Aperol over the ice.

Add Prosecco

Gently pour 3 oz chilled Prosecco into the glass. Pour slowly to preserve bubbles; pouring over the back of a spoon helps if desired.

Top with soda

Add 1 oz soda water to top the cocktail and give a light lift. Adjust a little more or less soda to taste.

Stir gently

Use a bar spoon to stir gently 3–4 times to combine ingredients without flattening the bubbles.

Garnish & serve

Garnish with one thin orange slice on the rim or floated in the glass. Serve immediately while cold and fizzy.

Chill

Chill a large pitcher and the bottles of Prosecco and Aperol in the refrigerator until cold (at least 20–30 minutes).

Prepare glasses

Place four large wine glasses in the freezer for 5–10 minutes or fill each with ice to chill.

Combine Aperol and Prosecco

In a chilled pitcher, combine 18 oz Aperol and 12 oz Prosecco. Stir gently to mix.

Add soda when serving

When ready to serve, add 4 oz chilled soda water to the pitcher and stir gently once to combine. For maximum fizz, you can instead top each glass with 1 oz soda individually.

Serve

Fill each glass three-quarters full with fresh ice. Pour the mixture evenly into the four glasses. Garnish each with an orange slice and serve immediately.
