Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar for crust, and melted unsalted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust
Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let it cool.
Prepare the filling
In a large bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until well combined. Add the sour cream, vanilla extract, and mix until smooth.
Add the eggs
Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
Bake the cheesecake
Pour the cream cheese filling over the cooled crust. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.
Cool and refrigerate
Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.
