Preparation
Prepare the Potatoes
Peel the potatoes and slice them thinly (about 1/8 inch thick). Place them in a large bowl and sprinkle with salt, tossing to combine for about 10 minutes.
Cooking
Cook the Potatoes and Onions
In a large, non-stick skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions, frying slowly for about 20-25 minutes until the potatoes are tender. Stir occasionally to prevent sticking.
Prepare the Egg Mixture
In a large bowl, crack the eggs and beat them lightly. Season with salt and black pepper to taste. Once the potatoes and onions are cooked, drain them from the oil and let them cool for a few minutes before adding them to the egg mixture.
Combine and Cook the Tortilla
Add the potato and onion mixture to the bowl with the eggs, stirring gently to combine. Wipe the skillet clean and add a little more olive oil. Heat over medium heat and pour in the egg and potato mixture, spreading evenly. Cook for about 5-7 minutes until the bottom is set.
Serve
Once both sides are cooked, slide the tortilla onto a serving plate. Allow it to cool slightly before slicing into wedges. Serve warm or at room temperature.
