Prepare the Ingredients

Chop the bison meat into bite-sized pieces, dice the potatoes, slice the carrots, and chop the onion and garlic.

Sear the Bison

In a large pot, heat olive oil over medium-high heat. Add the bison meat and sear until browned on all sides, about 5-7 minutes.

Add Vegetables

Add the chopped onion and garlic to the pot and sauté for 2-3 minutes until softened. Then, add the potatoes and carrots.

Add Broth and Seasonings

Pour in the beef broth and water. Add bay leaves, thyme, salt, and black pepper. Stir well to combine.

Simmer the Soup

Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for about 1 hour, or until the bison is tender.

Remove the bay leaves, adjust seasoning if necessary, and serve hot.
