Steak Preparation

Season the Steak

Rub the flat iron steak with olive oil, salt, and black pepper. Let it sit at room temperature for about 30 minutes.

Grill the Steak

Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes on each side for mid-rare. Remove from the grill and let rest for 5 minutes before slicing.

Chimichurri Preparation

Mix Chimichurri

In a bowl, combine chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Stir well and let it sit for at least 15 minutes to allow the flavors to meld.

Manchego Polenta Preparation

Cook Polenta

In a saucepan, bring water to a boil. Gradually whisk in the polenta and cook, stirring frequently, until thickened (about 5-7 minutes). Stir in Manchego cheese, butter, and salt until combined.

Roasting Carrots

Roast Baby Carrots

Preheat the oven to 400°F (200°C). Toss baby carrots with olive oil, salt, and black pepper. Spread on a baking sheet and roast for about 20-25 minutes or until tender and slightly caramelized.
