Prepare potatoes

Wash and scrub the potatoes; there is no need to peel unless you prefer. Cut the potatoes into 1 to 1 1/2-inch (2.5–4 cm) irregular chunks so they roast/cook evenly. Pat the pieces dry with a kitchen towel or paper towel to remove surface moisture.

Par-cook (boil) potatoes

Place the cut potatoes in a pot and cover with cold water by about 1 inch (2.5 cm). Add 1/2 teaspoon of the sea salt. Bring to a gentle boil, then reduce to a simmer and cook for 8–10 minutes, until the edges have softened but the centers are still slightly firm. Drain thoroughly in a colander and let steam-dry for 2–3 minutes.

Rough up edges

Return the drained potatoes to the still-warm pot. Put the lid on and shake the pot gently for 20–30 seconds to rough up the potato surfaces — this creates extra texture for crisping.

Coat and season

Preheat the oven to 220°C (425°F). In a large bowl, combine the par-cooked potatoes with the olive oil, remaining 1 1/2 tsp sea salt, black pepper, and smoked paprika. Toss to coat evenly so each piece has a thin layer of oil and seasoning.

Add aromatics and roast

Spread the potatoes in a single layer on a rimmed baking sheet or shallow roasting pan. Scatter the crushed garlic cloves and sprigs of rosemary or thyme among the potatoes. Roast at 220°C (425°F) for 25–35 minutes, turning once or twice halfway through, until the potatoes are golden-brown and crisp on the outside and tender inside.

Finish and season

When potatoes are done, remove from the oven. Discard rosemary sprigs (or remove large thyme stems) and discard whole garlic if you used whole cloves, or leave sliced garlic if you prefer it as part of the dish. Taste and adjust seasoning with additional salt and pepper if needed. If desired, sprinkle the lemon juice over the hot potatoes for brightness and toss gently.

Serve

Transfer the patatas to a serving bowl or platter. Optionally garnish with a little extra drizzle of olive oil, a pinch more smoked paprika, and a few chopped fresh herbs. Serve hot as a tapas item, side dish, or snack.
