Beef Patties
Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a patty about 3/4-inch thick and slightly wider than the buns. Do not overwork the meat. Use your thumb to press a shallow dimple in the center of each patty to help them cook evenly.
Season patties
Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.
Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil. When the oil is hot and shimmering, add the patties (dimple-side up). Cook undisturbed for 3 to 4 minutes until a brown crust forms. Flip and cook 3 to 4 minutes more for medium doneness (adjust time to reach desired doneness). If using cheese, place a slice on each patty during the last 1 minute of cooking and cover the pan briefly to melt.
Buns & Toppings
Prepare toppings
While the patties cook, wash and dry lettuce leaves. Slice the tomato into 1/4-inch thick rounds. If using cheese, have slices ready.
Assemble burgers
Place the bottom bun on a plate, add a lettuce leaf, then the cooked patty (with melted cheese if used). Top with a tomato slice and about 1 tablespoon ketchup (adjust to taste). Cover with the top bun and serve immediately.
Fries
Cook fries (oven method)
Preheat oven to 425°F (220°C). Toss frozen or fresh-cut fries with 2 tablespoons vegetable oil and spread in a single layer on a baking sheet. Roast for 20 to 30 minutes, turning once halfway through, until golden and crisp. Season with 1/2 teaspoon kosher salt immediately after coming out of the oven.
OR Cook fries (pan/fryer method)
If pan-frying or deep-frying, heat oil to 350°F (175°C) and cook fries according to package instructions or until golden and crisp. Drain on paper towels and season with 1/2 teaspoon kosher salt.
Serve fries
Plate the fries alongside the assembled burgers and offer additional ketchup if desired.
