Prepare calamari
Pat the cleaned calamari rings and tentacles very dry with paper towels. Removing excess moisture ensures a crisp coating.
Marinate briefly
Place the dried calamari in a bowl. Add the milk or buttermilk, lemon juice, 1 tsp salt, and 1/2 tsp black pepper. Stir to combine, cover, and refrigerate for 20–30 minutes. This tenderizes slightly and helps the coating adhere.

Mix dry ingredients
While the calamari marinates, combine the all-purpose flour, cornmeal or semolina (if using), garlic powder, paprika, kosher salt, ground black pepper, and cayenne (if using) in a shallow wide bowl or rimmed baking sheet. Whisk to evenly distribute spices.
Dredge calamari
Remove calamari from marinade in small batches, allowing excess milk to drip off. Working in batches (to avoid crowding), toss the calamari in the seasoned flour mixture, pressing lightly so the coating adheres. Shake off excess flour and set coated pieces on a tray; repeat until all are coated.
Frying
Heat the oil
Pour oil into a heavy, deep skillet, Dutch oven, or deep fryer to a depth of about 2–3 inches (about 3–4 cups depending on vessel). Heat over medium-high heat until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of the flour mixture — it should sizzle and brown in about 30–45 seconds.
Fry in batches
Carefully add a single layer of coated calamari to the hot oil without overcrowding (about a handful per batch). Fry for 1.5–2.5 minutes, turning once, until golden brown and crisp. Tentacles may cook slightly faster — remove when crisp and lightly browned. Use a slotted spoon or spider to transfer to a wire rack set over a sheet pan or to paper towels to drain. Sprinkle with the finishing 1/2 tsp salt while hot.
Maintain oil temperature
Allow oil to return to ~350°F between batches. If the oil gets too hot, lower heat; if too cool, increase slightly. Overcrowding or too-low temperature will make calamari soggy.
Finish & Serve
When all batches are fried, toss the calamari lightly with chopped parsley and transfer to a warmed serving platter.
Serve immediately with lemon wedges and marinara or aioli on the side for dipping. Fried calamari is best eaten hot and crisp within 10–15 minutes of frying.
