Shrimp & Marinade
Marinate shrimp
Pat shrimp dry with paper towels. In a bowl, combine the shrimp, 2 tbsp fresh lemon juice, 1 tsp kosher salt, 1 tsp freshly ground black pepper, and 1 tbsp finely grated fresh ginger. Toss to coat and let sit at room temperature for 10 minutes while you prepare the pan and sauce ingredients.
Sauce & Cook
Preheat pan
Heat a large skillet over medium-high heat until hot (about 2 minutes). Add 1 tbsp neutral oil and 1 tbsp unsalted butter; swirl to coat.
Sear shrimp
Add the marinated shrimp to the hot skillet in a single layer, leaving space between pieces. Sear without moving for 1 to 1½ minutes until the underside is golden. Flip shrimp and cook another 30–60 seconds until just opaque (total cook time about 2–3 minutes). Transfer shrimp to a plate and set aside.
Make caramel-ginger sauce
Lower heat to medium. Add the remaining 2 tbsp unsalted butter to the same skillet. Once it melts, sprinkle in 2 tbsp granulated sugar and stir constantly for 30–45 seconds until the sugar begins to dissolve and turn a light amber (careful not to burn). Add 1 tbsp low-sodium soy sauce and 1 tsp rice vinegar, stirring to combine. The mixture will loosen into a glossy caramel-like sauce.
Finish sauce
Stir in 2 tbsp chopped capers, 3 tbsp finely chopped fresh parsley, 1 tsp lemon zest, and 1 tsp red pepper flakes (if using). Taste and adjust seasoning: add a pinch more salt or 1/2 tsp lemon juice if you want brighter acidity. Cook 20–30 seconds to warm the capers and meld flavors.
Return shrimp to pan
Return the cooked shrimp to the skillet and toss in the caramel-ginger sauce until evenly coated, about 30 seconds. Heat just until the shrimp are warmed through and the sauce clings to them; avoid overcooking.
Garnish & Serve
Transfer shrimp to a serving plate. Sprinkle with extra chopped parsley, arrange lemon wedges alongside, and serve immediately so the caramel glaze remains glossy. Suggested accompaniments: steamed rice, crusty bread, or a simple green salad.
