Wash the apple and orange. Core the apple and cut into very thin slices (about 1/8 inch). Thinly slice the orange crosswise into rounds, removing seeds. Place slices in a large pitcher or bowl that will hold at least 1.5 liters.

Slice fruit

In a small saucepan, combine the 2 tablespoons cane sugar with 60 ml (4 tbs) water and the 2 cinnamon sticks. Warm over low heat, stirring until sugar dissolves and the mixture becomes fragrant, about 3–4 minutes. Do not boil. Remove from heat and let cool slightly for 5 minutes. If using simple syrup instead of granulated sugar, skip warming and use 2 tablespoons of syrup directly.

Warm spice infusion (optional)

Pour the entire bottle (750 ml) of Canyon Road Chardonnay into the pitcher over the sliced fruit.

Add the warm cinnamon‑sugar infusion (or 2 tbs simple syrup), and the 2 tablespoons fresh lemon juice to the pitcher. Gently stir to combine so the sugar and lemon disperse through the wine and fruit.

Add the cinnamon sticks into the pitcher to continue infusing aroma and cinnamon notes. If you prefer a stronger cinnamon presence, break one stick in half to expose more surface.

Cover the pitcher and refrigerate for 1–3 hours. For a quick service (30 minutes) the flavors will be lighter; 2–3 hours yields a more pronounced cinnamon and fruit character. Avoid infusing longer than 6 hours to prevent the wine from becoming overly tannic or oxidized in flavor.

When ready to serve, taste and adjust: if you want brighter acidity, add up to 1 tablespoon more lemon juice. If you prefer sweeter, stir in another teaspoon of sugar or a little more simple syrup.

For a lightly effervescent finish (optional), add up to 250 ml chilled sparkling water to the pitcher right before serving and stir gently to combine.

Fill wine glasses or tumblers with ice (about 1/4–1/2 cup per glass) if desired. Ladle the wine and fruit into glasses, including a couple of fruit slices and a cinnamon stick for garnish in each glass.

Sprinkle a light pinch (about 1/8–1/4 tsp) of ground cinnamon over each glass if desired and add a mint sprig for brightness.

Serve immediately. Leftover infused wine (without added sparkling water or ice) will keep covered in the refrigerator up to 24–36 hours; flavor and freshness decline after that.
