Method
Prepare Hot Elements & Eggs
Cook and season breakfast sausages and bacon
If sausages and bacon are not already cooked, heat a skillet over medium heat with 1 tablespoon butter. Cook breakfast sausage links, turning occasionally, 8–10 minutes until internal temp reaches 160°F (71°C). In the same pan, cook bacon to desired crispness, 6–8 minutes, then transfer to paper towels to drain. Halve cooked bacon slices.
Hard-boil eggs
Place 6 eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. When water reaches a rolling boil, cover, remove from heat, and let stand 9 minutes. Transfer eggs to an ice bath for 5 minutes, then peel and halve. Season halves lightly with 1/2 tsp salt and 1 tsp black pepper, sprinkling the cut sides.
Warm mini frittatas
If using pre-baked mini frittatas or egg muffins, warm them in a 350°F (175°C) oven for 6–8 minutes or microwave in 20-second bursts until warm through. Keep warm while assembling the board.
Prepare Cheeses, Breads & Spreads
Slice cheddar into thin slices or 1-inch cubes. Cut the brie wheel in half horizontally so guests can spoon into the soft interior; place the top half slightly askew. Place the goat cheese log on a small spreader plate and score lightly with a knife to make spreading easier.
Slice the baguette on the diagonal into 1/4-inch slices and toast under a broiler or in a 375°F (190°C) oven for 6–8 minutes until golden. Arrange mini croissants and assorted crackers on a board or platter. Place small bowls for grainy mustard, honey, fruit preserves, and mayonnaise/aioli.
Assemble Meats, Fruits & Accoutrements
Fan or loosely roll the smoked ham and prosciutto into small bundles and place them in separate areas of the board for easy grabbing. Create small stacks of soppressata/salami slices.
Place cooked breakfast sausages, halved bacon, hard-boiled eggs, and warmed mini frittatas in groups near the meats for a cohesive hot-element cluster.
Arrange cheeses with some space between them so guests can access each. Position the brie near a bowl of preserves and honey for drizzling. Put the goat cheese next to crackers and croissants for spreading.
Fill small dishes or nestle piles of mixed berries and grapes around the cheeses and meats for color and sweetness. Scatter dried apricots and mixed nuts in small clusters to provide texture contrast.
Fill small bowls with cornichons/pickles and marinated olives and tuck them into gaps on the board to add acid and balance. Place grainy mustard, mayonnaise/aioli, and softened butter in separate small bowls with spreaders.
Garnish the board with a light sprinkle of snipped chives over eggs and goat cheese, and drizzle 1–2 tablespoons honey over the brie or serve honey in a small bowl for guests to add as desired.
Final Presentation & Serving
Use a large wooden board or platter. Start by placing larger items (cheese rounds, small bowls) first, then fill around them with meats, breads, fruits, nuts, and pickles to create balanced visual sections and easy access. Keep knives for each cheese and small tongs or toothpicks for pickles and olives.
Serve immediately while hot elements remain warm. Replenish components as needed. Provide plates, napkins, and small forks so guests can build their own breakfasts.
