    Sauté the Vegetables

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Add Bell Pepper and Tomatoes

    Stir in the diced bell pepper and chopped tomatoes, cooking for another 5 minutes until softened.

    Incorporate Green Beans and Artichokes

    Add the chopped green beans and quartered artichoke hearts, mixing well.

    Season the Dish

    Stir in the paprika and saffron strands, allowing them to infuse their flavors.

    Add Rice and Broth

    Pour in the vegetable broth and add the Arborio rice. Stir to combine, and bring the mixture to a boil.

    Simmer

    Reduce the heat to low, cover the pan, and simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Peas and Finish

    In the last 5 minutes of cooking, add the frozen peas and let them warm through. Remove from heat.

    Garnish and Serve

    Squeeze fresh lemon juice over the top and garnish with chopped parsley. Season with salt and black pepper to taste before serving.
