Prepare the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Chorizo
In a large skillet, heat olive oil over medium heat. Add sliced chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo from the skillet and set aside.

Sauté the Shrimp
In the same skillet, add minced garlic and red pepper flakes. Cook for about 1 minute until fragrant, then add the shrimp. Cook until pink and opaque, about 3-4 minutes. Season with salt and black pepper to taste.

Combine Ingredients
Add the cooked chorizo back into the skillet with the shrimp. Stir in the basil pesto and blush sauce, mixing well to combine. Add the cooked penne pasta and toss until everything is evenly coated.

Add Mozzarella
Gently fold in the fresh mozzarella, allowing it to melt slightly into the warm pasta.

Serve immediately, garnished with additional basil or red pepper flakes if desired.
