Prepare the Cocktail
In a cocktail shaker, combine the pisco, fresh lime juice, simple syrup, and egg white. Do not add ice yet.

Dry Shake
Shake the mixture vigorously without ice for about 15 seconds to emulsify the egg white.

Add Ice and Shake Again
Add ice to the shaker and shake again vigorously for another 15-20 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled coupe glass or a similar glass.

Garnish
Add 3 dashes of Angostura bitters on the foam top of the drink. Optionally, you can create a design with the bitters.
