    In a large tagine or heavy pot, heat olive oil over medium-high heat. Add the lamb chunks and sear them on all sides until browned. Remove and set aside.

    In the same pot, add the chopped onion, garlic, and carrots. Sauté for about 5 minutes until softened.

    Return the lamb to the pot, then add the dried apricots, chopped tomatoes, and broth. Stir to combine.
