Marinating the Beef
In a large bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, and black pepper. Thinly slice the beef sirloin against the grain and add it to the marinade. Mix well and let it marinate for at least 30 minutes in the refrigerator.

Preparing the Slaw
In another bowl, combine the julienned cucumbers, shredded cabbage, rice vinegar, and sugar. Toss until well mixed and let it sit in the fridge for about 20 minutes to allow the flavors to meld.

Cooking the Beef
Heat a large skillet or grill pan over medium-high heat. Add the marinated beef in batches, cooking for about 3-4 minutes until browned and cooked through.

Cooking Crystal Noodles
While the beef is cooking, prepare the crystal noodles according to package instructions. Drain and set aside.

Serving
To serve, place a portion of cooked crystal noodles on a plate, top with the bulgogi beef, and serve the Asian cucumber cabbage slaw on the side. Sprinkle with sesame seeds before serving.
