1. Prepare Marinara Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add crushed tomatoes, oregano, basil, sugar, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally, until thickened. Adjust seasoning to taste.
2. Prepare Calamari
In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Pat the calamari rings dry with paper towels. Dredge the rings in the flour mixture, shaking off any excess.
3. Fry Calamari
In a large pot or deep fryer, heat vegetable oil to 375°F (190°C). Carefully add the dredged calamari in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
4. Serve
Serve the fried calamari hot, garnished with grated parmesan, pickled banana peppers, and lemon wedges alongside the marinara dipping sauce.
