    Prepare the Caramel

    In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves and turns into a golden caramel. Quickly pour the caramel into a round baking dish, tilting it to coat the bottom evenly. Set aside to cool and harden.

    Prepare the Custard

    In a mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until smooth and well combined.

    Combine and Bake

    Pour the custard mixture over the hardened caramel in the baking dish. Place the dish in a larger baking pan filled with hot water (bain-marie). Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

    Cool and Serve

    Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan and invert it onto a serving plate, allowing the caramel to flow over the top.
