Make the filling

In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent. Stir in the finely chopped ham and cook for another 2-3 minutes.

Create the bechamel

Sprinkle the flour over the onion and ham mixture, stirring continuously for about 2 minutes to cook the flour. Gradually add the milk while stirring to avoid lumps. Cook until the mixture thickens, about 5 minutes. Season with salt, black pepper, and nutmeg.

Cool the mixture

Remove the skillet from heat and let the mixture cool. Once cooled, refrigerate for at least 2 hours or until firm.

Form the croquettes

Once the mixture is firm, take small portions and shape them into cylinders or balls. Dip each croquette into the beaten eggs, then roll in breadcrumbs to coat evenly.

Fry the croquettes

In a deep frying pan, heat the oil over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serve the croquetas de jamón hot with aioli on the side.
