    Make the Churro Dough

    In a medium saucepan, combine water, butter, sugar, salt, and vanilla extract. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour until a dough forms. Let the dough cool slightly before adding the eggs one at a time, mixing well after each addition until smooth.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Churros

    Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch long strips of dough directly into the hot oil, cutting them with scissors. Fry the churros until golden brown, about 2-3 minutes per side.

    Coat the Churros

    Remove churros from the oil and drain on paper towels. Combine granulated sugar and cinnamon in a bowl, and roll the churros in this mixture while they are still warm.
