Prepare and toast

Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a baking sheet. Brush both sides lightly with extra-virgin olive oil (about 2 tbs total) and sprinkle evenly with 1 tsp fine sea salt. Toast in the oven 8–10 minutes, flipping once halfway, until golden and crisp around the edges. Remove and cool slightly.

Truffle Whipped Ricotta

Whip ricotta

Place 2 cups whole-milk ricotta, 2 tbs heavy cream, 1 tbs grated Parmigiano-Reggiano, 1 tsp white truffle oil, 1 tsp fresh lemon zest, 1 tsp fresh lemon juice, 1 tsp fine sea salt, and 1 tsp freshly ground black pepper in a food processor or blender. Pulse and then run until the mixture is very smooth and airy, 45–60 seconds. Taste and adjust seasoning: add more salt, pepper, or up to 1/2 tsp more truffle oil if desired (use sparingly). Transfer whipped ricotta to a bowl and keep chilled until assembly.

Texture adjustment (optional)

If the mixture is too loose, chill 10–15 minutes to firm; if too thick, add up to 1 additional tablespoon cream and pulse briefly to incorporate.

Fig Compote

Cook compote

Combine 2 cups quartered fresh figs (or chopped dried figs), 2 tbs granulated sugar, 3 tbs water, 1 tbs fresh lemon juice, 1 tsp dark balsamic vinegar, 1 tsp fresh thyme leaves (optional), and a pinch of sea salt in a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally. Reduce heat to low and cook 8–12 minutes until figs are softened and syrup thickens slightly. Smash some figs with the back of a spoon for a jammy texture but leave some pieces whole for bite. Remove from heat and let cool to warm or room temperature.

Adjust sweetness/acidity

Taste the compote and add up to 1 tbs more sugar or 1/2 tsp more lemon juice if needed to balance sweetness and acidity. Cool to room temperature before assembling crostini so the ricotta doesn't melt.

Assembly & Garnish

Assemble crostini

Spread or pipe about 2 tablespoons of truffle whipped ricotta onto each toasted baguette slice. Top each with approximately 1 tablespoon of fig compote, letting some syrup drizzle over the ricotta.

Finish and serve

Drizzle each crostini with about 1/4 teaspoon (roughly 1/2 tsp distributed across two crostini) of honey, sprinkle with flaky sea salt (a light pinch per crostini), and finish with a crack of freshly ground black pepper. Garnish with microgreens or a small thyme sprig. Serve immediately at room temperature.
