Prep mushrooms

If using fresh shiitake, remove stems and finely chop caps. Sauté mushrooms in a dry nonstick skillet over medium heat until they release moisture and it evaporates, 4–5 minutes. Remove and let cool slightly.

In a medium bowl combine ground pork, cooled mushrooms, chopped green onions, grated ginger, minced garlic, soy sauce, sesame oil, rice wine, truffle oil, cornstarch, salt, and white pepper. Mix gently but thoroughly with a fork or spatula until evenly combined and slightly tacky—do not overwork (about 30–45 seconds).

Taste a small cooked pinch of the filling: pan-fry about 1/2 teaspoon of mixture until cooked through to check seasoning; adjust salt, pepper, or truffle oil as desired.

Wontons & Assembly

Lay out wonton wrappers on a lightly floured (cornstarch) work surface. Keep unused wrappers covered with a damp towel to prevent drying.

Place about 1 teaspoon of filling in the center of each wrapper. Be careful not to overfill to avoid bursting during cooking.

Dip your finger into the cold water. Moisten the edges of the wrapper, then fold: for triangular wontons fold in half to form a triangle, press edges to seal. For a classic pouch bring the two opposite corners together and press to seal, leaving a small air pocket if you like. Ensure all edges are well sealed by pressing firmly.

Lightly dust finished wontons with a pinch of cornstarch to prevent sticking and place them on a tray lined with parchment or lightly floured surface.

Deep-fry method (crispiest)

Heat 2 inches of vegetable oil in a heavy saucepan to 350°F (175°C). Fry wontons in small batches, without overcrowding, until golden and crisp, 2–3 minutes. Remove with a slotted spoon and drain on paper towels.

Pan-fry (potsticker style)

Heat 1 tablespoon vegetable oil in a nonstick skillet over medium. Add wontons in a single layer and sear 1–2 minutes until bottoms are golden. Add 1/4 cup water, cover tightly, and steam until water evaporates, about 3–4 minutes. Remove lid and cook another 30–60 seconds to re-crisp bottoms.

Boil (softer, soup-style)

Bring a pot of salted water to a gentle boil. Add wontons in batches and stir gently. Cook 3–4 minutes until they float and filling is cooked through. Remove with a slotted spoon and drain.

Make dipping sauce: combine low-sodium soy sauce, black or rice vinegar, and chili oil if using. Taste and adjust proportions. Place sauce in a small bowl for serving.

Arrange cooked wontons on a platter. For finishing touch, drizzle lightly (very sparingly) with extra truffle oil—about 1/8 teaspoon total for the batch—or add a tiny pinch of grated Parmesan to each if using. Garnish with microgreens or sliced scallions. Serve immediately with dipping sauce.
