Prepare chocolate bases

Divide the chopped chocolates into three bowls: dark (8 oz), milk (6 oz), white (4 oz). Place a fine-mesh sieve over each bowl to catch any unmelted bits.

Infuse milk

In a small saucepan, combine whole milk (1 cup) and vanilla (1 tsp). Warm over medium heat until just simmering (do not boil). Remove from heat.

Temper egg yolks

In a heatproof bowl, whisk egg yolks (4) with granulated sugar (3 tbs) until pale. Slowly pour about 1/3 of the hot milk into the yolks while whisking constantly to temper. Then return the tempered yolk mixture to the saucepan with the remaining milk and cook over low heat, stirring constantly, until mixture thickens slightly and coats the back of a spoon (about 3–4 minutes). Do not let it boil.

Divide custard

Remove the custard from heat and immediately divide it equally into three portions (approximately 1 cup custard each).

Melt chocolates

Pour one portion of hot custard over the dark chocolate bowl, another over the milk chocolate, and the last over the white chocolate. Let sit for 1 minute, then stir each until smooth and fully combined. If necessary, place each bowl over a double boiler (simmering water) briefly to ensure complete melting. Stir in a pinch of salt into each chocolate mix.

Cool to room temperature

Cover the surfaces with plastic wrap to prevent skin and let the chocolate custards cool to room temperature (about 20–30 minutes).

Whip cream

While custards cool, chill a mixing bowl and whip heavy cream (3 cups) to medium-soft peaks. Divide whipped cream into three portions proportional to the chocolate amounts: 1 1/4 cups for dark, 1 cup for milk, 3/4 cup for white (approximate).

Fold cream into custards

Fold the whipped cream gently into each corresponding chocolate custard in three stages: add one third and fold to lighten, then add the rest until homogeneous and airy. Do not overfold—preserve volume.

Portion and chill

Spoon or pipe the three mousses in layers or side-by-side into serving glasses or a single large bowl: start with dark mousse, then milk, then white (or arrange as preferred). Smooth tops and cover. Chill in refrigerator at least 3 hours or overnight to set.

Toast and chop hazelnuts

If hazelnuts are not pre-toasted, spread 1 cup hazelnuts on a baking sheet and toast at 350°F (175°C) for 8–10 minutes until fragrant. Rub in a kitchen towel to remove skins, then roughly chop and set aside.

Make caramel

In a medium heavy-bottomed skillet or saucepan, spread granulated sugar (1 cup) in an even layer. Cook over medium heat without stirring until sugar melts and turns an amber color—gently swirl the pan if needed. Watch carefully to avoid burning.

Add butter and nuts

When caramel reaches deep amber, remove from heat and carefully stir in unsalted butter (2 tbs) until incorporated. Immediately add the toasted chopped hazelnuts and stir to coat evenly. Work quickly as caramel sets fast.

Cool and break into shards

Pour the nut-caramel mixture onto a parchment-lined baking sheet and spread thin. Sprinkle flaky sea salt (1 tsp) over the top. Let cool completely until hard (~20–30 minutes). Break into small shards or roughly chop to create crunchy pieces.

Assembly & Garnish

Assemble final dessert

Remove chilled mousses from refrigerator. If layered, uncovered surfaces will be set. Spoon or scatter hazelnut crunch on top of each serving (about 1–2 tbs per serving) to add texture.

Garnish

Dust with cocoa powder or sprinkle grated chocolate (2 tsp) over each portion. Optionally place a whole hazelnut (1 per serving) on top for presentation.

Serve chilled. Leftovers: keep covered in refrigerator up to 3 days to preserve mousse texture and crunch (store hazelnut shards separately if possible to keep them crisp).
