Clean and simmer the tongue
Rinse the beef tongue under cold water. Place it in a large pot and add 8 cups of water, 1 tablespoon kosher salt, smashed ginger, 4 smashed garlic cloves, halved shallot, and 1 bay leaf. Bring to a gentle boil over medium-high heat, then reduce to a low simmer. Partially cover and simmer until fork-tender, about 2 to 2 1/2 hours (internal texture should be very soft). Skim any foam from the surface during the first 20–30 minutes.
Peel and cool
When the tongue is tender, remove it from the pot and transfer to a cutting board. While still warm (but cool enough to handle), trim off any excess fat and the root end. Use your fingers or a paring knife to peel the thick outer membrane — it should come away fairly easily after simmering. Let the peeled tongue cool to room temperature, then wrap and chill for at least 1 hour (chilling makes slicing thin easier). Reserve 1/4 cup of the cooking liquid for later if desired.
Slice and season
Once chilled, slice the tongue across the grain into 1/8–1/4-inch (3–6 mm) slices. Pat slices dry with paper towels. Lightly season both sides with a pinch of salt.
Sear for texture
Heat 1 tablespoon vegetable oil in a heavy skillet over medium-high heat until shimmering. Working in batches, sear the tongue slices 30–45 seconds per side until edges are golden and just slightly crisp — do not overcook. Transfer slices to a plate and keep warm. Reserve any browned bits in the pan for flavor.
Thai-Style Dressing (Nam Jim-inspired)
Make toasted rice powder (if not using pre-made)
Optional: To make toasted rice powder, heat a dry skillet over medium heat, add 2 tablespoons uncooked jasmine rice, and toast, shaking the pan, until the rice turns golden brown and aromatic (3–5 minutes). Transfer to a mortar and pestle or spice grinder and pulse to a coarse powder. Use 2 teaspoons in this recipe.
Whisk the dressing
In a bowl, combine 3 tablespoons fish sauce, 3 tablespoons fresh lime juice, 2 teaspoons palm or brown sugar, finely minced 2 garlic cloves, and sliced chiles. Whisk until the sugar dissolves. Taste and adjust balance — it should be bright, salty, sour, and slightly sweet.
Add aromatics
Fold in the very thinly sliced shallot, 2 tablespoons chopped cilantro, 1 tablespoon chopped mint, and 2 teaspoons toasted rice powder. Let the dressing sit 10–15 minutes so the shallot softens and flavors meld.
Veg & Garnish
Assemble and serve
Arrange seared tongue slices on a serving platter. Scatter the thinly sliced cucumber and green onion over the tongue. Spoon the Thai-style dressing evenly over the slices so every piece gets some sauce and aromatics. Garnish with cilantro leaves and lime wedges. Serve immediately, allowing diners to squeeze extra lime as desired.
Serving suggestions
Serve the dish with steamed jasmine rice or sticky rice and extra sliced chiles on the side. Leftover slices can be refrigerated up to 3 days in an airtight container; reserve dressing separately and reheat tongue slices briefly in a hot pan before dressing.
