Prepare Crab

Carefully pick through the lump crabmeat to remove any shells; transfer meat to a medium mixing bowl and gently break up large lumps so pieces remain somewhat chunky.

Combine Flavorings

Add the sliced green onions, chopped cilantro, minced jalapeño, mayonnaise, mustard, hot sauce, lemon juice, Worcestershire sauce, Old Bay, salt, and black pepper to the bowl with crab. Gently fold to combine, being careful not to overwork the crab.

Bind the Filling

Stir in the lightly beaten egg and panko breadcrumbs until the mixture holds together when pressed. If too wet, add up to 2 tablespoons more panko; if too dry, add 1 teaspoon mayonnaise. Chill the mixture in the refrigerator for 20–30 minutes to firm.

Form Beignets

Using a tablespoon or small scoop, portion the chilled crab mixture into 1 to 1 1/4-inch mounds, rolling gently into rounds. Place on a tray lined with parchment and keep refrigerated while you make the batter and heat the oil.

Make Batter

In a medium bowl whisk together the flour, baking powder, salt, and sugar. Add the cold sparkling water and stir gently until just combined; a few small lumps are fine. If using ice, add it to keep the batter extra cold. Batter should be thick enough to coat the back of a spoon but still pourable; adjust with a tablespoon of flour or water if needed.

Keep Cold

Place the batter bowl over a larger bowl filled with ice or keep in the refrigerator until ready to fry. Cold batter yields lighter, crisper beignets.

Heat Oil

Pour oil into a deep-sided pot or Dutch oven to a depth of about 2–3 inches (roughly 3–4 cups depending on pot). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise steadily.

Fry Beignets

Dip each chilled crab mound into the cold sparkling-water batter to fully coat, letting excess drip back into the bowl. Carefully lower 4–6 beignets at a time (depending on pot size) into the hot oil. Fry for about 2.5–3 minutes, gently turning once, until golden brown and crisp. Maintain oil temperature between 325–350°F (160–175°C) — lower heat slightly if browning too quickly.

Drain

Use a slotted spoon to transfer fried beignets to a wire rack set over a baking sheet or to paper towels to drain. Sprinkle a light pinch of salt over them while hot if desired.

Serve

Arrange beignets on a platter, garnish with chopped parsley or cilantro and lemon wedges. Serve immediately with spicy remoulade or aioli for dipping.

Make-Ahead & Reheating

You can shape the crab mounds ahead and refrigerate for up to 24 hours. To reheat fried beignets, bake at 350°F (175°C) on a wire rack for 5–7 minutes or until heated through to keep them crisp.
