Chill glass

Optional: Place a highball glass or Collins glass in the freezer for 5–10 minutes, or fill it with ice while preparing the cocktail so it is nicely chilled.

Add 2 oz gin and 0.75 oz fresh lime juice to a cocktail shaker or mixing glass. If you prefer a slightly sweeter Rickey, add 0.25 oz simple syrup.

Fill the shaker or mixing glass with ice and shake briskly for 8–10 seconds just to chill and dilute slightly (or if you prefer a stirred preparation, stir with ice for about 10–12 seconds).

Discard ice from the chilled serving glass if you used it to chill. Fill the glass with fresh ice (large cubes or crushed, to preference).

Strain the shaken or stirred gin and lime mixture into the glass over the fresh ice.

Top with about 3 oz club soda (adjust to taste). Gently stir once or twice to integrate; avoid over-stirring to keep the soda fizzy.

Garnish with a lime wheel or wedge on the rim. Serve immediately with a short straw or swizzle stick.

Notes

Adjust sweetness by omitting or adding up to 0.5 oz simple syrup. For a whiskey Rickey (more classic), substitute bourbon or rye for the gin at the same measurement. Use fresh lime juice for best flavor.
