Base & Spirits

Method

Base & Spirits

1

Chill glass

Place a chilled coupe or Nick & Nora glass in the freezer or fill with ice water while you prepare the drink to ensure it's cold.

2

Combine 2 oz Japanese gin, 0.5 oz black sesame-infused vodka, and 0.25 oz dry vermouth in a mixing glass.

3

Add large ice cubes to the mixing glass until it is about 3/4 full to properly chill and dilute the cocktail.

4

Stir the spirit mixture gently for 20–30 seconds (about 20–30 full strokes) until well chilled and slightly diluted. Do not shake — stirring preserves clarity and texture.

Liqueur & Flavor

5

Add 0.5 oz umeshu and 0.5 oz charcoal-activated simple syrup to the mixing glass with the stirred spirits.

6

Stir an additional 10–15 seconds to integrate the liqueur and syrup into the base while maintaining clarity.

Citrus & Bitters

7

Add 0.5 oz fresh yuzu juice and 2 dashes of bitters to the mixing glass. Give a final gentle stir for 5–10 seconds to marry the citrus and bitters with the rest of the drink.

Garnish & Finish

8

Discard ice or water from the chilled serving glass and strain the cocktail through a fine mesh strainer into the chilled coupe or Nick & Nora to remove any tiny ice shards and ensure a silky texture.

9

Lightly toast 1 tsp black sesame seeds in a dry skillet over medium heat for 20–30 seconds until fragrant (optional). Allow to cool briefly.

10

Express the oils from a yuzu or lemon twist over the surface of the cocktail by holding the twist skin-side down and giving it a sharp snap, then rim the glass with the twist and drop it into the drink.

11

Using a small spoon, gently scatter the toasted black sesame seeds on the surface of the cocktail (they will float briefly, creating a starry 'midnight' effect). If using edible gold leaf, apply a tiny flake to the surface as a final shimmering accent.

Serving Variations & Notes

12

For a slightly colder, softer variation, serve over 1/2 cup crushed ice in a rocks glass and follow the same garnish steps. The crushed ice will mellow the flavors over time.

13

Charcoal-activated simple syrup: make by combining 1 cup sugar and 1 cup water in a saucepan, heating until the sugar dissolves. Remove from heat, whisk in 1/2 tsp food-grade activated charcoal or finely sifted powdered activated charcoal until evenly distributed, then cool and strain through a fine mesh or coffee filter. Store refrigerated. Use caution and source food-grade charcoal.

14

Black sesame-infused vodka: lightly toast 2 tbsp black sesame seeds, cool, then combine with 375 ml vodka in a sealed jar. Let steep 24–48 hours, taste for desired intensity, then strain through a fine mesh and coffee filter.
