Chill glass

Place the cocktail glass in the freezer for 5–10 minutes or fill it with ice water to chill while you prepare the cocktail.

Add ice to mixing vessel

Fill a mixing glass or cocktail shaker halfway with cubed ice (about 1 cup) to properly chill and dilute the drink.

Measure and pour spirits

Measure 2.5 oz of London dry gin and 0.5 oz of dry vermouth. Pour both over the ice in the mixing glass. If you prefer a wetter Martini, increase vermouth to 0.75–1 oz; for extra dry, reduce vermouth.

Optional bitters

If using, add 1 dash of orange or lemon bitters to the mixing glass to add aromatics and complexity.

Stir to chill and dilute

Using a long bar spoon, stir the mixture gently for 20–30 seconds (about 15–20 full rotations). Stirring chills and dilutes the cocktail without aerating it, keeping the appearance clear.

Prepare garnish

If using a lemon twist: use a peeler or paring knife to cut a 1-inch strip of lemon peel, avoiding too much white pith. Express oils by holding the twist over the glass and giving it a quick twist, then rub the rim and drop it into the drink. If using an olive: thread 1 green olive onto a cocktail pick.

Strain and serve

Dump the ice or water from the chilled glass. Double-strain the stirred mixture into the chilled cocktail glass using a julep or Hawthorne strainer (and a fine mesh if desired) so the drink is clear and free of shards of ice.

Garnish and finish

Garnish with the lemon twist or the olive. Serve immediately. Suggest serving with a small water glass on the side if desired.
