Bring water to boil
Pour 6 cups of water into a medium saucepan. Add 1 tablespoon kosher salt and bring to a rolling boil over high heat.
Cook edamame
Add 1 cup edamame (in pods) to the boiling water. Return to a boil, then reduce heat slightly to maintain a steady boil and cook for 3–5 minutes until pods are bright green and tender but still slightly firm. If using frozen edamame, follow the lower end of the time range; if fresh, test at 3 minutes.
Drain and shake
Drain the edamame in a colander and give the colander a good shake to remove excess water. Immediately transfer the hot edamame to a large mixing bowl so they stay warm for seasoning.
Seasoning
Add butter (optional)
If using, add 1 teaspoon unsalted butter to the hot edamame and toss quickly so it melts and lightly coats the pods.
Season
Sprinkle 1 teaspoon fine sea salt (or flaky finishing salt), 1 teaspoon freshly ground black pepper, and 1 teaspoon red pepper flakes or togarashi (if using) over the hot edamame. Squeeze 1 teaspoon fresh lemon juice over them if you want a bright note. Toss thoroughly to distribute seasonings so each pod is lightly coated.
Adjust to taste & serve
Taste one pod and adjust seasoning as needed (add more salt, lemon, or heat). Serve immediately while hot. To eat, pop the beans from the pod into your mouth and discard the pod.
