Trim and prepare asparagus

Rinse the asparagus under cold water and pat dry. Snap or trim the woody ends so spears are even (about 1 to 1.5 inches from the bottom). If spears vary widely in thickness, group similar-thickness spears together for even cooking.

Preheat grill

Preheat an outdoor grill or grill pan over medium-high heat (about 400–425°F / 205–220°C). If using a gas grill, set to medium-high; if using charcoal, wait until coals are covered with gray ash.

Bundle and season

Divide the asparagus into 8 bundles of 3–4 spears each (depending on thickness). Lightly brush each bundle all over with olive oil. Season bundles evenly with sea salt and freshly ground black pepper.

Wrap with prosciutto

Lay one prosciutto slice flat on a cutting board. Place a bundle of asparagus near one end of the slice and wrap the prosciutto around the spears tightly, leaving the tips exposed. If your prosciutto slices are short, overlap two half-slices as needed. Repeat for all bundles.

Grill

Place the prosciutto-wrapped bundles on the preheated grill perpendicular to the grates to prevent them from falling through. Grill for 3–5 minutes per side until the prosciutto is crisp and browned in spots and asparagus is tender-crisp. Turn gently with tongs to avoid unwrapping. Total grilling time typically 6–10 minutes depending on thickness.

Finishing & garnish

Transfer the grilled bundles to a serving plate. Immediately squeeze the lemon half over the bundles to add brightness.

If desired, shave Parmesan over the warm asparagus and sprinkle a light pinch of red pepper flakes for heat. Taste and adjust seasoning with a small additional pinch of salt and pepper if needed.

Serve warm as an appetizer or side. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat briefly in a hot oven (375°F / 190°C) for 5–7 minutes to crisp prosciutto.
