Prep eggs
Crack the 4 large eggs into a medium bowl. Add 1 tsp fine sea salt, 1 tsp freshly ground black pepper, 1 tablespoon light soy sauce, and 1 teaspoon rice vinegar. Using a fork or small whisk, beat vigorously until the whites and yolks are completely combined and the mixture is slightly frothy (about 30–45 seconds). The soy and vinegar season and help produce crisp edges.

Fry aromatics quickly
Lower the heat to medium-high. Add the minced garlic and half of the sliced scallions to the hot oil. Stir for 8–12 seconds until fragrant but not browned. If using chili flakes or fresh chili, add them now and stir once to release aroma.
Flash-fry eggs
Tilt the wok so the oil pools on one side. Immediately pour the beaten eggs into the hot oil in one motion, allowing them to spread thinly. Do not stir. The eggs will sizzle vigorously — this is expected. Let cook undisturbed for 20–40 seconds until the underside is deeply golden and crispy at the edges while the center is mostly set but still slightly glossy. If the eggs are cooking too quickly and the center remains raw, reduce heat slightly but keep oil hot enough for crisping.
Flip or fold for finish
For fully cooked but still tender centers: use a wide spatula to carefully flip the egg mass in sections and cook the other side for 10–20 seconds. For a more textured result: fold the egg in half or thirds with the spatula and press gently against the wok for 5–10 seconds to crisp the folded edges. The goal is a combination of crisp edges and slightly pillowy interior.
Finish and season
Turn off the heat. Drizzle 1 teaspoon sesame oil (optional) and an extra sprinkle (~1/4 tsp) of salt or a small dash of soy sauce over the cooked eggs to taste. Scatter the remaining sliced scallions on top. If you like heat, add a few drops of chili oil or a pinch more chili flakes.
To Serve
Transfer the crispy wok-fried eggs to plates. Serve immediately over steamed rice or alongside toasted bread. Offer extra soy sauce, chili oil, and cilantro for garnish. Eat hot to enjoy the contrast between the crisp, lacy edges and the soft interior.
Storage and reheat: Store leftovers (if any) in an airtight container in the refrigerator for up to 2 days. Reheat briefly in a hot skillet with a teaspoon of oil to re-crisp edges; avoid microwave if you want to keep texture.
