Score and season
Pat the snapper dry with paper towels. Make 3 shallow diagonal cuts on each side of the fish, about 1–1.5 cm deep. Rub the entire fish (inside cavity and exterior) with 1 tablespoon olive oil, then season inside and out with 1 tablespoon kosher salt and 1 teaspoon freshly ground black pepper.

Preheat the oven to 220°C (425°F). Position a rack in the center.
Make the sand mixture
In a large mixing bowl combine 600 g fine sea salt and 200 g fine semolina. Mix in 1 teaspoon black pepper and 1 tablespoon lemon zest. Whisk together 3 egg whites and 60 ml cold water until slightly frothy (no need to form stiff peaks). Pour the egg-white mixture into the salt/semolina and stir with a fork until the mixture is evenly moistened and resembles damp sand. The mixture should hold shape when squeezed but not be wet.
Prepare baking surface
Line a large rimmed baking sheet with parchment paper or lightly oil it. Spread roughly one-third of the sand mixture into a flat bed slightly larger than the fish (about 1–1.5 cm thick) to create a cushion.
Set the fish in the sand
Place the stuffed, seasoned snapper on the sand bed. With the back of a spoon or your hands, mound the remaining sand mixture all over the fish, covering the sides and top but leaving the tail and fins slightly visible if desired for presentation. Press gently and evenly so the sand crust is compact and adheres to the fish surface. Avoid packing too hard; the crust should be solid but not rock-hard.
Roast
Place the baking sheet in the preheated oven and roast for 22–28 minutes, depending on fish thickness (roasting time for a 1 kg whole snapper is typically about 25 minutes). The sand crust will harden and turn slightly golden at the edges.
Finish & garnish
Rest and crack the sand
Remove the tray from the oven and let the fish rest, still covered in sand, for 5 minutes. Transfer the fish on the sand carefully to a large platter. Using the backside of a spoon or a small hammer/tenderizer wrapped in kitchen towel, gently crack and lift off the sand crust in sections. Brush away remaining salt from the skin surface with a dry pastry brush or small spoon. Do not rinse the fish.
Unstuff and plate
Open the cavity and remove the thyme sprigs and lemon halves (discard). Using a fish spatula, transfer the whole fish to a serving platter or fillet at the table. Drizzle 2 tablespoons extra virgin olive oil over the exposed flesh and sprinkle with 2 tablespoons chopped fresh parsley. Serve with lemon wedges.
Serving notes
For a crisp skin and moist flesh, serve immediately. The sand-crust seals in moisture and seasons the fish subtly — taste before adding additional salt, as the salt crust can impart saltiness to the flesh.
