Prepare and marinate fillets
Pat the black bass fillets very dry with paper towels. Sprinkle both sides with kosher salt and freshly ground black pepper. Place fillets on a plate, drizzle with 1 tablespoon fresh lime juice and rub in 1 teaspoon grated fresh ginger. Let rest at room temperature for 10–15 minutes while you prepare the crust and dredge — this will lightly flavor the fish and help the crust adhere.

Make the coconut-panko mixture
In a shallow bowl combine 1 cup unsweetened shredded coconut and 3/4 cup panko breadcrumbs. Mix thoroughly so the coconut and panko are evenly distributed. If you prefer a finer crust, pulse briefly in a food processor (4–6 quick pulses) but do not turn into flour.
Prepare the flour and egg stations
In a second shallow bowl whisk together 1/2 cup all-purpose flour, 1 tablespoon cornstarch and 1/2 teaspoon fine sea salt. In a third shallow bowl beat 2 large eggs with 2 tablespoons water until uniform.
Dredge the fillets
Lightly dust each marinated fillet in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip back into the bowl. Press the fillets firmly, coconut-side down, into the coconut-panko mixture, then carefully press the top and sides so the crust adheres. For best adhesion press the crust onto the skin-side (or flesh-side if skin removed) and set aside on a wire rack for 5 minutes to let the coating set.
Pan-frying & finishing
Heat the pan
Place a large nonstick or stainless steel skillet over medium-high heat. Add 3 tablespoons neutral oil and heat until shimmering but not smoking (about 2–3 minutes). If using butter for flavor, add 1 tablespoon unsalted butter once the oil is hot and let it melt and foam briefly; this will add browning and flavor but keep heat high enough so the butter does not burn.
Cook the fillets
Carefully place the fillets crust-side down into the hot pan. Press gently with a spatula for 10–15 seconds to ensure full contact between crust and pan. Cook without moving for 3–4 minutes, until the crust is deeply golden brown and releases easily. Flip the fillets and cook the other side (skin-side or flesh-side) 2–3 minutes more, until the fish is opaque through the center and reaches an internal temperature of 135–140°F (57–60°C) for moist, slightly firm texture. If fillets are thicker than 1 inch, reduce heat to medium and cover loosely for 1–2 minutes after flipping to allow gentle cooking through.
Rest and finish
Transfer cooked fillets to a plate lined with a paper towel or a warm wire rack. Let rest 2 minutes — this helps the crust set and juices redistribute. Squeeze lime wedges over the fish and sprinkle with chopped cilantro if using.

While the fish rests, combine 1/4 cup mayonnaise, 2 tablespoons yogurt or sour cream, 1 tablespoon sweet chili sauce, 1 teaspoon lime juice and 1/8 teaspoon salt in a small bowl. Whisk until smooth. Taste and adjust sweetness, heat or acidity as desired.
