Method
Cocktail Base
Add ingredients
Measure and pour 2 oz vodka, 0.5 oz triple sec, 0.5 oz fresh lime juice, 1 oz fresh grapefruit juice, and 0.5 tsp agave syrup into a cocktail shaker.
Add egg white
Add 0.5 oz egg white (or 0.5 oz aquafaba for a vegan version) into the shaker. This will create a silky foam and integrate the citrus flavors.
Brightener & Foam
Dry shake
Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and build foam.
Wet shake
Add a generous handful of ice (about 1 cup) to the shaker and shake hard for 12–15 seconds until the shaker is very cold and the exterior is frosted.
Finish & Garnish
Prep glass
Run a grapefruit twist around the rim of a chilled coupe or rocks glass, then lightly dip the rim into 0.25 tsp coarse salt to create a subtle salty edge.
Double strain and serve
Double-strain the cocktail into the prepared glass using a fine mesh strainer to remove ice shards and produce a silky texture and a stable foam top.
Add bitters and garnish
Carefully drop 3 dashes of Angostura bitters onto the foam and, using a toothpick, gently drag through the drops to create a simple pattern if desired. Finish with a grapefruit twist or a thin wheel perched on the glass.
Taste and adjust
Taste a small sip; if more sweetness is desired, stir in an additional 1/4 tsp agave. If more brightness is wanted, add 1/4 tsp fresh lime juice and lightly stir.
