Berry Purée & Prep
Make the berry purée
Place the strawberries and raspberries in a blender or food processor with the granulated sugar and lemon juice. Purée until smooth, about 30–45 seconds. If you prefer a very smooth texture, strain the purée through a fine mesh sieve into a bowl, pressing with the back of a spoon to remove seeds. You should end up with roughly 1 cup of smooth purée.
Fold in blueberries
Gently stir the fresh blueberries into the purée (reserve a few whole berries for garnish). This gives a mix of texture and color; if you prefer, pulse the blueberries briefly in the blender for a uniformly colored purée.
Assemble the Bubbles & Berries
Combine purée and sparkling
In a large pitcher, add the berry purée. Slowly pour in the chilled Prosecco or Champagne, stirring gently once or twice to incorporate. Pouring slowly preserves the bubbles. Next, add the chilled club soda and stir gently to combine. Taste and, if you prefer a sweeter drink, stir in up to 2 teaspoons of simple syrup.
Chill briefly
Place the assembled pitcher in the refrigerator for 10–15 minutes if time allows. This lets the flavors meld without flattening the sparkling components.
Serve & Garnish
Prepare glasses
If using crushed ice, add a tablespoon or two to each glass (optional). Place 2–3 whole berries in the bottom of each glass and add a small sprig of mint.
Pour and finish
Gently pour the Bubbles & Berries mixture into each glass, dividing evenly. Garnish each serving with a strawberry half on the rim, additional berries floated on top, and a mint sprig. Serve immediately so the drink remains effervescent.
