Prepare steaks

Bring the 4 filet mignons to room temperature for 30 minutes. Pat dry with paper towels. Season evenly with 1 tsp kosher salt and 1 tsp freshly ground black pepper on all sides.

Make marinade

In a small bowl, combine 8 cloves mashed black garlic, 2 tbs soy sauce, 1 tbs balsamic vinegar and 2 tbs olive oil until smooth.

Marinate

Brush or gently rub the black garlic marinade over both sides of each filet. Let rest at room temperature for 20–30 minutes (or refrigerate up to 2 hours; if chilled, bring back to room temp before cooking).

Make crust mixture

In a small bowl combine 4 cloves black garlic paste, 3 tbs panko, 2 tbs grated Pecorino/Parmesan, 1 tbs melted butter and 1 tsp chopped thyme. Mix into a slightly coarse paste — it should hold together when pressed.

Apply crust

After marinating, pat excess marinade lightly so crust adheres. Press about 1 tablespoon of the black garlic crust onto the top (or top two-thirds) of each filet, pressing firmly to adhere. Chill briefly in refrigerator for 10 minutes to set the crust while you heat the pan.

Heat pan

Preheat an oven to 400°F (200°C). Heat a heavy ovenproof skillet (cast-iron preferred) over medium-high heat until very hot. Add 1 tbs olive oil and swirl to coat.

Sear steaks

Sear the filets, crust-side up first, in the hot skillet for 1–1.5 minutes to develop color on the sides touching the pan (you want the crust mostly facing up to avoid burning). Using tongs, sear the top edge briefly if needed. Flip the steaks so the crust faces up and the bottom gets a quick sear, about 30–45 seconds.

Finish in oven

Transfer the skillet to the preheated oven. Roast until the internal temperature reaches desired doneness: about 6–8 minutes for medium-rare (125–130°F / 52–54°C), 8–10 minutes for medium. Remove skillet from oven.

Rest steaks

Transfer filets to a warm plate and tent loosely with foil. Let rest 6–8 minutes so juices redistribute while you make the pan sauce.

Make pan sauce

Return the skillet to medium heat. Add 1 tbs unsalted butter and the minced shallot; sauté 30–45 seconds until softened (scrape up any browned bits). Deglaze with 1 tbs red wine, scraping loosened bits. Add 1 cup beef stock and 2 thyme sprigs; simmer until reduced by about half (6–8 minutes). Reduce heat to low and whisk in the remaining 3 tbs cold butter a piece at a time to create a glossy emulsion. Season with 1/4 tsp salt and 1/2 tsp freshly ground black pepper to taste. Strain sauce through a fine-mesh sieve into a small saucepan if you prefer a smoother sauce.

Finish and plate

Slice steaks or serve whole. Spoon pan sauce over and around each filet. Sprinkle flaky sea salt lightly over each crusted top and garnish with microgreens or baby arugula if using.
