Noodles & Sauce
Prepare noodles
Bring a large pot of salted water to a rolling boil. Add lo mein noodles and cook according to package instructions until just al dente (usually 6–8 minutes). Drain and rinse briefly under warm water to stop cooking, then toss with 1 tsp sesame oil to prevent sticking. Set aside and keep warm.
Make sauce
In a bowl, whisk together low-sodium soy sauce, oyster sauce, warm broth, cornstarch, sugar, and remaining 1 tsp sesame oil until smooth and cornstarch is fully dissolved. Taste and adjust — it should be savory with a touch of sweetness. Keep nearby.

Prep vegetables
While water heats and noodles cook, mince the garlic and ginger, slice the green onions separating whites and greens, and cut all vegetables into thin, uniform pieces so they cook quickly and evenly.
Stir-fry vegetables
Heat a large wok or heavy skillet over high heat until hot. Add neutral oil and swirl to coat. Add minced garlic, minced ginger, and the white parts of the green onions; stir-fry 15–20 seconds until fragrant (do not burn). Add carrots and bell pepper; stir-fry 1–2 minutes. Add snow peas and cabbage (and bean sprouts if using); continue to toss 1–2 minutes until vegetables are crisp-tender. Season lightly with 1/4 tsp of the white/black pepper. Vegetables should still have some bite.
Combine & Finish
Combine noodles and sauce
Push the vegetables to the side of the wok (or remove briefly) and add the cooked noodles to the center. Pour the prepared sauce over the noodles and toss briskly with tongs or two spatulas to evenly coat. If you removed the vegetables, return them now and toss everything together. Stir-fry for 1–2 minutes until sauce thickens and clings to noodles and vegetables. Add bean sprouts last minute if using, just to warm through.
Adjust and finish
Taste and adjust seasoning with salt or additional soy sauce if needed. Sprinkle the green onion greens and toasted sesame seeds over the top, drizzle the 1/2 tsp sesame oil for fragrance, and give a final toss. Remove from heat immediately to avoid soggy vegetables.
