Prepare and toast
Preheat the oven to 400°F (200°C). Arrange baguette slices in a single layer on a baking sheet. Brush both sides lightly with 2 tablespoons extra-virgin olive oil and season with 1 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper. Toast in the oven 8–10 minutes, flipping once halfway, until edges are golden and crisp. Remove and let cool slightly.
Truffle Whipped Ricotta
Drain and smooth ricotta
If your ricotta is very wet, line a fine-mesh sieve with a paper towel and drain 15 minutes. Transfer 2 cups whole-milk ricotta and 1/4 cup grated Parmigiano-Reggiano to the bowl of a food processor (or a large bowl if using an immersion blender).
Whip to creamy texture
Add 2 tablespoons heavy cream, 1 teaspoon white truffle oil, 1 tablespoon lemon zest, 1 teaspoon lemon juice, 1/2 teaspoon fine sea salt, and 1/4 teaspoon freshly ground black pepper. Process or blend until very smooth and airy, about 45–60 seconds. Taste and adjust seasoning—add an extra 1/4 teaspoon salt or a few drops more truffle oil if desired. Fold in 2 tablespoons finely snipped chives by hand.
Fig Compote
Soak and simmer figs
Place 1 cup dried mission figs and 1/2 cup water in a small saucepan. Bring to a gentle simmer over medium heat and cook 6–8 minutes until softened. If using fresh figs, add the 4 quartered fresh figs in the last 3 minutes of cooking so they soften but retain some shape.
Sweeten and reduce
Stir in 2 tablespoons brown sugar, 1 tablespoon honey, 1 tablespoon balsamic vinegar, 1/2 tablespoon lemon zest, a pinch of fine sea salt (about 1 tsp as measured above), and 1/8 teaspoon freshly ground black pepper. Reduce heat to low and simmer, stirring occasionally, until mixture is thick and jammy, about 8–12 minutes. Remove from heat and let cool to room temperature; the compote will thicken further as it cools.
Assembly & Garnish
Build the crostini
Spread a generous tablespoon (or to taste) of the truffle whipped ricotta onto each toasted baguette slice. Spoon about 1 teaspoon to 1 tablespoon of fig compote over the ricotta, depending on slice size and preference.
Finish and serve
Top each crostini with a few toasted almond slivers, a small sprinkle (about 1/4 teaspoon) of freshly grated Parmigiano-Reggiano if using, and a few microgreens or a thyme leaf. Drizzle each crostini very lightly with 1 teaspoon extra-virgin olive oil and, if desired, a final tiny drop of truffle oil. Serve immediately at room temperature.
