Method
Beignet Batter & Filling
Prepare crab
Gently pick through the lump crabmeat to remove any cartilage or shells; pat dry on paper towels and set in a bowl.
Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, fine salt, and granulated sugar until evenly combined.
Combine wet and dry
In a separate bowl, lightly beat the egg, then whisk in the cold club soda until just combined. Pour the wet mixture into the dry ingredients and stir with a spatula until a thick, slightly lumpy batter forms. Do not overmix; the batter should be thick enough to hold a spoonful of crab.
Fold in crab and herbs
Gently fold the crabmeat, chopped chives, chopped parsley, minced jalapeño (if using), and black pepper into the batter, taking care not to break up the crab lumps. The mixture should be moist but spoonable; if too loose, add up to 1 tablespoon additional flour.
Heat oil
Pour the vegetable oil into a heavy-bottomed pot or deep fryer to a depth of about 2–3 inches. Heat to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter: it should sizzle and brown in about 45–60 seconds.
Fry beignets
Using two spoons or a small scoop (about 1 tablespoon batter per beignet), carefully drop mounds of batter into the hot oil, frying in batches to avoid crowding. Fry until golden brown and puffed, about 2–3 minutes per side, turning as needed with a slotted spoon. Remove to a wire rack or paper towel–lined tray to drain. Keep warm in a low oven (200°F/95°C) while you finish frying remaining batches.
Lemon-Caper Butter
While the oil heats or during the first few batches, melt the unsalted butter in a small saucepan over low heat. Remove from heat and stir in the lemon zest, lemon juice, chopped capers, sea salt, and freshly ground black pepper. Keep warm; do not let the butter brown. Spoon a small amount (about 1/2 teaspoon) over each finished beignet just before serving to impart bright, briny flavor.
Chipotle Crème Fraîche
In a small bowl, combine the crème fraîche (or sour cream), minced chipotle, adobo sauce, lemon juice, salt, and honey if using. Taste and adjust heat or salt. Chill until ready to serve. The sauce should be cool and creamy, with a smoky-spicy kick.
Finishing & Garnish
To plate, arrange 3–4 beignets per serving. Drizzle each beignet lightly with the warmed lemon-caper butter (about 1/2 tsp each). Dot or drizzle the chipotle crème fraîche around or over the beignets (about 1 tbsp per serving). Lightly sprinkle a pinch of butter powder over each beignet for the concentrated buttery aroma. Garnish with microgreens or extra chopped chives and serve immediately with a lemon wedge on the side.
Serve hot: these are best eaten right away while crispy outside and tender inside. Provide extra chipotle crème fraîche on the side for dipping.
