Muddle

In a cocktail shaker, add the fresh thyme leaves. Gently muddle the thyme 6–8 times to release oils — you want aromatic, not pulverized, leaves.

Combine

Add the Seventy One Gin (2 oz), Junmai sake (1 oz), orgeat syrup (0.5 oz), fresh lemon juice (0.5 oz) and fresh orange juice (0.25 oz) into the shaker with the muddled thyme.

Dry shake (optional)

If you prefer extra integration and a slightly silkier texture, give the shaker a quick dry shake (no ice) for about 8–10 seconds.

Shake with ice

Add a cup of ice to the shaker and shake vigorously for 12–15 seconds until well chilled and slightly frosty on the outside.

Double strain

Double-strain the mixture into a chilled Collins or highball glass filled with fresh ice. Double-straining (using a fine mesh sieve) removes thyme bits and small ice shards for a cleaner drink.

Top with club soda

Gently top the cocktail with Q Mixers Club Soda (about 2 oz). Pour slowly to preserve carbonation and to avoid breaking up the foam/texture too much.

Garnish

Give a gentle slap to a fresh thyme sprig to release its aromatics and lay it on top of the drink. Add an edible flower or a citrus twist if desired. Optionally run the citrus twist around the glass rim before dropping it in.

Serve

Serve immediately with a stirring straw so the drinker can lightly mix if desired. Enjoy the floral-herbal aroma and the balance of gin, sake, nutty orgeat and bright citrus.
