Prepare and marinate chicken
Trim excess fat from chicken thighs and cut into 1½-inch pieces. Place the pieces in a bowl and add soy sauce, mirin, sake, grated ginger, grated garlic, kosher salt, and black pepper. Toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour (not more than 2 hours) to allow flavors to penetrate.
Set up dredging station
When ready to fry, place the cornstarch and all-purpose flour in a wide shallow bowl and whisk to combine. Lightly beat the egg in a small bowl. Remove chicken from the marinade and let excess marinade drip off; reserve any liquid only if you plan to lightly mix a tablespoon into the egg for adhesion (optional). Toss the chicken pieces with the cornstarch/flour mixture until well coated — you want a thin, even layer of starch. For extra crispness, double dredge: dip in egg then back into starch, or simply toss in starch and shake off excess.
Heat oil
Pour neutral oil into a heavy-bottomed saucepan or deep skillet to a depth of about 1½–2 inches (roughly 2–3 cups depending on pan). Heat oil over medium-high heat to 325°F (160–165°C) for the first fry. If you don't have a thermometer, test with one small piece — oil should sizzle steadily but not aggressively smoke.
First fry (cook through)
Fry chicken in small batches (do not overcrowd) for 3–4 minutes until the exterior firms and pieces are cooked through but not deeply browned. Use a slotted spoon to transfer pieces to a wire rack set over a sheet pan or paper towel-lined tray to drain. Let rest for 3–5 minutes.
Raise oil temperature and second fry (crisp)
Increase oil temperature to 375°F (190°C). When hot, return the rested pieces to the oil in batches and fry for 45–90 seconds until golden brown and very crisp. Remove to the wire rack and season immediately with a light sprinkle of salt if desired. Keep warm in a low oven (200°F / 95°C) while finishing remaining batches.
Finish and serve
Arrange shredded cabbage or microgreens on the serving plate, pile the karaage on top, and garnish with lemon wedges. Serve immediately with smoked tartar sauce on the side for dipping.

Make smoked tartar sauce
In a small bowl combine mayonnaise, finely diced smoked dill pickles (or diced regular pickles plus 1/4 tsp liquid smoke), chopped capers, minced shallot, lemon juice, Dijon mustard, chopped fresh dill, smoked paprika, black pepper, and salt. Stir until evenly combined. If the sauce is too thick, loosen with up to 1 teaspoon of water, stirring after each addition. Taste and adjust seasoning — more lemon for brightness, more smoke for accent.
Rest for flavors to meld
Cover and refrigerate the tartar sauce for at least 15 minutes before serving to allow flavors to marry. Bring to cool room temperature if chilled heavily before serving alongside hot karaage.
