Prepare the mozzarella sticks

Chill the mozzarella log in the freezer for 20–30 minutes so it firms up — this helps prevent melting during frying. After chilling, slice the log into 3/4-inch thick sticks (about 12–14 sticks per pound). Pat each stick dry with paper towels.

Wrap with prosciutto

Wrap each mozzarella stick with a half or full slice of prosciutto depending on coverage desired. Press gently so prosciutto adheres. The prosciutto adds flavor and an extra barrier against leakage.

Breading

Set up breading stations

Place the flour in a shallow bowl and season with 1/2 tsp of the kosher salt and 1/4 tsp black pepper. In a second bowl, whisk together the eggs and 2 tablespoons of milk until combined. In a third shallow bowl, combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, and the remaining 1/2 tsp salt and 1/4 tsp black pepper.

First coat

Dredge each prosciutto-wrapped mozzarella stick in the seasoned flour, shaking off excess. This helps the egg adhere.

Egg wash

Dip the floured stick into the egg mixture, ensuring full coverage.

Breadcrumbs

Roll the stick in the breadcrumb mixture, pressing gently so crumbs adhere. For an extra-secure coating, place breaded sticks on a tray, cover, and refrigerate for 15–20 minutes to set the coating.

For a thicker crust, repeat the egg wash and breadcrumb step once more, then refrigerate 15 minutes to firm up.

Frying

Heat oil

Pour oil into a heavy-bottomed pot or deep fryer to a depth of 2–3 inches and heat to 350°F (175°C). Use a thermometer to maintain temperature; too hot will brown crust before cheese warms, too cool will cause oil absorption.

Fry in batches

Working in small batches (3–4 sticks at a time), carefully lower breaded sticks into the hot oil. Fry for 1.5–2 minutes, turning gently once, until golden brown and crisp. Do not overcrowd the pot; maintain 350°F by adjusting heat between batches.

Drain

Use a slotted spoon to transfer sticks to a wire rack set over a baking sheet or paper towels to drain. Let rest 1–2 minutes — cheese will still be hot inside.

Oven finish (optional for guaranteed minimal leakage)

Alternatively, after frying for 30–45 seconds per side just to set the crust, transfer sticks to a 375°F (190°C) oven for 5–7 minutes to finish melting the cheese without overbrowning.

Sauce & Garnish

Warm marinara

Heat marinara sauce in a small saucepan over low heat until simmering, about 3–5 minutes. Taste and adjust seasoning if needed.

Serve

Arrange mozzarella sticks on a platter with a small bowl of warm marinara. Garnish with torn fresh basil and a sprinkle of extra grated Parmesan if desired. Serve immediately so crust remains crisp and cheese remains gooey.
