Sushi Rice

Rinse and Soak

Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, gently stirring with your hand, until the water runs nearly clear (about 6–8 rinses). Drain and transfer rice to a rice cooker or pot. Add 360 ml water, cover, and soak 30 minutes (if rice is at room temperature).

Cook Rice

If using a rice cooker, cook according to the cooker instructions. If using a pot, bring rice and water to a gentle boil over medium heat, then reduce heat to low, cover tightly and simmer 12–14 minutes until water is absorbed. Remove from heat and let rest, covered, 10 minutes.

Season Rice

While rice cooks, heat 4 tbs rice vinegar, 1.5 tbs sugar, and 1 tsp fine sea salt in a small saucepan over low heat just until sugar and salt dissolve; do not boil. Transfer cooked rice to a large shallow wooden or plastic bowl (a hangiri if available). Evenly pour the vinegar mixture over the rice. Using a rice paddle or spatula, fold the rice—cutting and turning motions—to mix and cool simultaneously. Fan the rice as you fold to give it shine. Allow rice to cool to slightly above room temperature (about 15–20 minutes).

Slice Otoro

Keep the otoro chilled until just before assembly. Using a very sharp, long sashimi knife (or chef's knife) chilled and wiped dry, trim any connective tissue from the fish. Cut the otoro into pieces for nigiri: slice across the grain into 12–14 slices, each about 2.5–3.5 cm wide, 1 cm thick, and 6–7 cm long (adjust to yield 12 pieces). Make a single smooth pull-slice motion to produce clean surfaces; keep slices chilled on a plate covered with plastic wrap.

Portion Wasabi

Form 12 small pea-sized portions of wasabi paste (about 1/8 tsp each). These will be used between rice and fish to adhere and add a hint of heat.

Prepare Hands

Fill a small bowl with clean water and a splash of rice vinegar (optional) to wet your hands; this prevents rice from sticking. Keep a damp cloth nearby to wipe your hands occasionally.

Form Rice Ovals

With wet hands, take about 20–22 g (roughly 2 tablespoons) of seasoned sushi rice and form a compact oblong mound: press gently between palm and fingers to shape an oval about 5–6 cm long. The rice should be lightly packed—firm enough to hold but not crushed. Repeat to make 12 rice ovals and place them on a clean tray.

Assemble Nigiri

Place a small dab (pea-sized) of wasabi on the underside of each otoro slice. Lay each slice of otoro over a rice oval, wasabi side down, and press gently with thumb and forefinger to adhere the fish to the rice. Use the other hand to lightly press the sides once so the fish wraps slightly around the rice. Keep movements gentle to preserve the fatty texture.

Finish and Serve

Arrange the otoro nigiri on a chilled plate. Serve immediately with soy sauce and pickled ginger on the side. Encourage diners to dip the fish side (not the rice) lightly into soy sauce to avoid soaking the rice. Best enjoyed immediately for optimal texture and flavor.

Cleanup & Storage

If not serving all at once, store assembled nigiri covered in the refrigerator for up to 1 hour on a tray; note that rice will firm and fish texture will change — optimal quality is immediate. Leftover seasoned rice can be refrigerated (covered) for up to 24 hours; do not freeze. Clean knives and surfaces with hot soapy water to remove fish oils.
