Sushi Rice

Rinse and cook rice

Place 1 cup short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, gently swishing, until the water runs mostly clear (about 2–3 minutes). Drain 10–15 seconds. Combine rinsed rice and 1.1 cups water in a small saucepan with a tight-fitting lid. Let rice soak 20–30 minutes at room temperature for even cooking. Bring to a gentle boil over medium heat, then reduce to the lowest heat, cover and simmer 12 minutes. Remove from heat and let stand, covered, for 10 minutes.

Season rice

While rice cooks, warm 2 tbs rice vinegar, 1 tbs sugar, and 1/2 tsp salt in a small saucepan or microwave just until sugar dissolves; do not boil. Transfer the cooked rice to a wooden or wide non-reactive bowl (hangiri or large bowl). Gently fold the vinegar mixture into the rice using a rice paddle or spatula with cutting and folding motions to avoid smashing grains. Fan the rice while folding (or use a small fan) to cool it to near body temperature — this gives shine and the correct texture. Cover with a damp towel to keep moist until shaping (work within 30–45 minutes).

Prepare Toppings

Keep fish very cold until just before assembly. Using a very sharp, long-bladed knife, slice fish at a slight angle into 2–3 mm thick slices roughly 2.5–3 inches long and 1–1.5 inches wide, suitable to drape over a rice nugget. For shrimp: if using ebi, butterfly by cutting along the belly, remove vein, poach briefly until opaque if raw, chill, and press gently to slightly flatten for nigiri. Pat all toppings dry with paper towel.

If offering delicate finishing sauces (ponzu or yuzu), have them ready in small dishes for light brushing at the end. Prepare optional garnishes (thinly sliced chives, microgreens) and portion pickled ginger and wasabi to serve.

Shape Nigiri

Wet your hands with cold water (keep a bowl of cold water nearby). Take approximately 2 tablespoons (about 25–30 g) of seasoned sushi rice and gently form an oblong mound: press rice together lightly using your fingertips and thumb to create a compact but slightly springy rice ball approximately 1.5–2 inches long. Do not compress until dense; nigiri rice should hold shape but still have lightness.

Place a small dab (~1/8–1/4 tsp) of wasabi either on the underside of the fish slice (traditional) or directly on the rice if preferred. Lay a slice of fish over the rice, hold gently with one hand and use the other to press the fish to the rice with a single, smooth motion, forming a tidy seam underneath. For shrimp nigiri, position the butterflied shrimp on top and press lightly to adhere.

Repeat to make five pieces total, varying the fish so the selection showcases the chef’s choice (for example: tuna, salmon, hamachi, shrimp, tai). Wipe knife between slices if trimming any edges.

Finish & Serve

Arrange the five nigiri on a chilled plate. Optionally brush a very light amount of ponzu or yuzu sauce on individual pieces (use a teaspoon to lightly brush or a dropper for precision) where appropriate (e.g., white fish or hamachi). Garnish selected pieces with a tiny pinch of chive or microgreen if desired.

Serve immediately with small dishes of soy sauce, pickled ginger and extra wasabi on the side. Nigiri is best eaten within 15 minutes of shaping to preserve rice texture and fish temperature.
