Inspect and prepare fillet

Keep fish cold until ready to work. Pat the hamachi fillet dry with paper towels. Remove any remaining bones with tweezers and trim away any dark bloodline or sinew to avoid off flavors.

Light cure (optional; improves texture and flavor)

Lay the fillet on a tray skin-side down. Sprinkle sea salt evenly over the flesh side and drizzle rice vinegar over the salted surface. Cover and refrigerate for 15 minutes. Rinse briefly under cold running water and pat dry. This lightly firms the flesh and seasons it gently.

Chill

Place the prepared fillet on a small rack set over an ice bed or in contact with a bowl of iced water to keep it very cold while slicing. Cold fish slices hold shape and are safer to eat.

Slice hamachi

Using a very sharp long sashimi knife (yanagiba) make single, decisive strokes. Hold the blade at a slight angle (about 10–15°) and slice across the grain. For classic sashimi portions, cut 6–8 slices about 1/4 inch (5–7 mm) thick and 2 inches (5 cm) long. Wipe the blade clean between strokes for smooth edges.

Arrange

Fan the slices neatly on a chilled plate or over crushed ice. Leave space between slices so each piece can be picked up easily. If serving as nigiri instead, cut slightly thicker pieces and shape over vinegared rice.

Garnishes & Condiments

Prepare soy and wasabi: Pour soy sauce into small dipping bowls. Place a small dab of wasabi on the side of each diner’s plate or in the center of the soy bowl if you prefer mixing. Note: traditional etiquette often places wasabi directly on the fish by the chef.

Garnish: Thinly slice half a lemon and either place a small wedge on the plate or lightly brush a couple of drops of lemon juice over a few slices for brightness. Scatter thinly sliced scallion and microgreens or place a shiso leaf near the sashimi for aroma and contrast.

Serve immediately: Accompany the hamachi with pickled ginger. Serve the plate chilled; replenish ice beneath the plate if necessary to keep fish cold throughout service.

Finishing & Service

Optional finishing: For a contemporary touch, lightly dot a tiny amount of wasabi or yuzu kosho on a slice just before serving, or mist with a tiny spray of ponzu for extra umami. Keep additions minimal so the delicate hamachi flavor remains primary.

Safety and storage: Consume sashimi immediately. If you must store, keep tightly wrapped and refrigerated for no more than 24 hours; do not refreeze.
